New Summer Specials
--Part One

Starting in July, the Scalo kitchen team will present an impressive selection of never-before-seen specials! Our talented cooks will prepare these dishes with new ingredients for the enjoyment of our guests. The following selected dishes, plus many more, will be on rotation for dinner throughout the summer. Ask your server about the daily specials on your next visit to Scalo!

Entrees

Grilled beef tenderloin topped with your choice of gorgonzola or cambozola cheese. Mushroom risotto and sauteed spinach accompany this entree. Our kitchen has crafted a fine Nebbiolo red wine sauce to unite these flavors. Similar to Barolo, Nebbiolo is from the Piedmonte region of Italy.

Pork chop stuffed with basil pesto and gorgonzola cheese. Served with mashed potato, baby carrots, zucchini, and mushroom shallot cream sauce.

8 ounce grilled whole natural free range chicken breast with sage pesto, roast potato, pancetta, arugula, and pan jus.

Pasta

House made lobster and mascarpone ravioli with tarragon in tomato cream sauce. Creamy, smooth, and delightful, mascarpone cheese makes a perfect surprise accompaniment to lobster.

Pasta Rustica with linguini noodles, tossed with prosciutto, spinach, garlic, crumbled gorgonzola, hazelnuts, and basil cream sauce.

Insalate

Heirloom tomato caprese salad with extra virgin olive oil, balsamic reduction, and fresh mozzarella. This classic Italian favorite boasts the biggest, juiciest, and highest quality heirloom tomatoes available.

July 3 and 4: The Santa Fe Wine Festival

From noon to 6 pm on July 3 and 4, The Santa Fe Wine Festival will take place at its regular venue: beautiful El Rancho de Las Golondrinas in Santa Fe. The setting is a living piece of State history, and the wine comprises the finest new offerings from New Mexico wineries like Gruet, St. Clair, Casa Rodeňa, and many more!

We offer fine wines from Gruet winery as part of our new wine list, including Chardonnay and Pinot Noir. We at Scalo are rooting for Gruet to take top honors once more. Click here for more information about the Santa Fe Wine Festival.

August 13: Be A Hero To The NMSO!

Scalo will cater a fundraiser for the New Mexico Symphony Orchestra on August 13, 2010 at the home of Ambassador and Mrs. Edward Romero. The NMSO is asking their attendees to "Be A Hero For The NMSO" with the goal of raising $1 million dollars to resolve the entirety of NMSO's current debt.
Steve Paternoster, the owner of Scalo, is a member of the NMSO Board of Trustees and is passionate about providing vital assistance to the Symphony. All of us at Scalo are proud to contribute to this landmark fundraiser with food and specialty "superhero" cocktails: "Captain America" and "Iron Man" will be in attendance!
The NMSO is vital to the good of our local businesses and greater community. We hope that this event will be a great success! For more information on becoming a sponsor of this fine organization, click here.

The Scalo Il Bar staff has selected four new summertime wines from regions as varied as their taste, body, and spirit. Even the shape (and in case of the Grüner Veltliner, size) of these bottles and their labels suggest the great differences among these wines.

1. Oriveto "Campogrande" 2008, Antinori, Umbria
 
Following in the footsteps of the 2006 generation, which was a huge hit at Scalo, Orvieto makes a triumphant return just in time for summer. From Umbria, the only land locked region of Italy. Perfect with shrimp, cream sauces, or our antipasto misto, this Orvieto is a medium bodied white with a dry, clean finish. By the glass--$7. By the bottle--$28. 
 
2. Cava Rose (Monastrell/Pinot Noir) "MPX" NV, Marques de Monastrell, Spain 
 
Don't let the rich color of red berries deceive--instead of sugary sweet, this sparkling rose is crisp, elegant, and refreshing. The subdued taste of Pinot Noir balances with the thick-skinned monastrell grape. As a result, the flavor of tannins (the bitter element in the skin) is creamy, not overpowering.  By the glass--$8. By the bottle--$32.
 
3. Gruet Pinot Noir, 2007
 
Red meat loves a big glass of Pinot Noir, and vice versa! Made by New Mexico's leading winery, this still red wine is a deep, dark red, and hides a light flavor that complements beef and tuna particularly. By the glass--$12. By the bottle--$48.
 
4. Grüner Veltliner, Berger Austria--1 liter
 
The ultimate patio wine. Food-friendly and refreshing, this very big bottle demands to be shared among friends. A delight with our cheese platter, carpaccio, or just about anything on our happy hour menu. By the glass--$8. By the bottle--$36.
 
All of these wines are available at half price all day on Mondays! Half glass (gusto) and 8.5 ounce (quartino) servings are available any time.
